SHERRY'S MOUSSAKA

1 lb ground turkey, pork or beef
1 diced onion
2 large diced potatoes
1 large (or 2 small) diced eggplant
optional: carrots, broccolo, cauliflower, tomatoes etc.
2 cups chicken broth
-cinn, nutmeg, salt to taste

brown meat and drain fat, add onion and saute. Add optional vegetables and eggplant. Sautee until eggplant is lightly browned. Add potatoes. Stir in chicken broth. season w/ spices allow to boil then lower to simmer. Cover and cook 30-40 minutes, stir occasionally. Add broth if liquid simmers away.

Makes a ton.
